CO2 Extracts use supercritical carbon dioxide to extract all the essential hop constituents (alpha acids, beta acids, and hop oils) from the hops while leaving plant matter and the most undesirable components (tannins, polyphenols, etc.) behind. The end result is a syrupy concentrate that is very easy to use and particularly handy for measured bittering additions. Use the Alpha Acid rate to determine bitterness additions. For aroma additions use 20%-25% of the weight of T90 pellets from the recipe. This comes in a graduated syringe for you to add the number of mls required and comes packaged in a vacuum pouch. Take some hot wort from the kettle or cool beer from the fermenter and heat to 50+ degrees – this will allow the viscous syrup to become more fluid – then add required amount of hop extract to this sample and mix well before adding back to the kettle or fermenter.
